Scrumptious Healthy Fall Pumpkin Pancakes








It's everyones favorite time of year, so I thought what better time to share a twist on everyone's favorite classic breakfast item. You guessed it, pancakes! Not only just your regular old fashion box pancakes, but home made quick and easy pumpkin pancakes. Did I mention these are delicious yet? And healthy!

 With only five ingredients, you most likely won't even have to leave the convenience of your home. Here's the list of ingredients you'll need in case you do.

1 15 ounce can of canned pumpkin pure
2 eggs
2 cups rolled oats
1/4 cup honey or agave
2 tsp pumpkin pie extract

1. Add each of these ingredients to a high speed electric blender and get your mix on. 
2. After about two minutes or until everything fully combined and you get a thick consistency that looks easily scoop-able, go ahead and move everything over to a medium sized dish.
3. Heat up a non-stick pan over medium heat, making sure to coat with cooking spray or coconut oil.
4. Once heated grab yourself a cookie scooper or spoon, taking about two full scoop and apply it onto a pan over low to medium heat and flatten out the batter into a circle sized pancake.
5. Cook each side for about 3-4 minutes on one side until you see it start to brown a little on the outside. Than go ahead and flip repeating this process through each pancake.
6. Grab a fork and enjoy!

You can get creative and customize this recipe to your liking as well! Adding in a little pumpkin pie spice and cinnamon would make this an even better festive treat. When I made these set of pancakes for both me and my mom, I decided to go the extra mile and top it off with a little sautéed cinnamon apples. Do yourself a favor and go the extra mile because the flavors are totally worth it! We added different toppings like assorted nuts, chocolate chips, and whipped cream. Toppings are this girls best friend. These pancakes are a great source of dietary fiber, healthy fat, vitamin c, and will keep you full all morning long. This scrumptious meal definitely calls for an honored card in my recipe box. How about yours?!
