Superfood Pomegranate Chia Pudding


My very first chia pudding was a delicious success! I decided to start the game strong and cut right to the chase, by using a super food of course. I call this one the pomegranate chia pudding.


Pomegranate powder is our star of the show. This powder is made up of dried and ground pomegranate seeds. It is a raw, superfood that contains an awesome amount of nutrients! It's going to spike up a sweetish tart flavor to all your favorite sweet and savory dishes. 

The brand of powder I used is from Navitas Naturals. I found this right at my local target, but I've also seen it online at the thrives market, vita cost, and amazon. 

Let's begin by saying I got an amazing deal on this bag! I found it sitting on one of the sale shelves for $1.39! I had to double check the label to see if I was seeing it correctly. This item retails at over $15. So long story short, I bought two ;) The lesson for today is to always check those sale items folks!


This recipe only calls for four items and about three minutes of your time. This makes a great mid day snack, pre-made breakfast, or even dessert! It's going to keep you feeling fully satisfied and your tummy will thank you later. 

If you've been around here long enough and you've read previous recipes on my blog, you might know that my favorite thing about food is toppings! To no surprise, I'm keeping that trend because this pudding is perfectly top-able. 

I love to top it with chopped walnuts, goji berries, and cocoa nibs. These are all wonderful, healthy, and balanced options that will give you that extra satisfying crunch. I know I can't live without it!

Pomegranate chia pudding

The only reason it may take any more than 10 minutes, is if you're snapping pictures of your delicious desserts!

Ingredients:
  • 1/4 cup chia seeds
  • 1 tbsp pomegranate powder
  • 1 tsp agave or honey
  • 3/4 cup of almond or coconut milk
Directions:
 1. Add chia seeds and pomegranate powder in to a bowl or jar.
 2. Place agave or honey into the mixture.
 3. Pour milk into ingredients and mix well, until combined.
 4. Place into the refrigerator over night.
 5. Top your pudding off with your favorite toppings and enjoy.
