Fluffy Fresh-Baked Vegan Chocolate Chip Cookies


When you think of any holiday season what comes to mind first? To me, it usually includes the three F words. Friends, family, and FOOD of course! In this case a bakers favorite...chocolate chip cookies! Who doesn't love an old time classic treat? 

With a little extra twist, I'm going to share a delicious treat that's vegan friendly. What a great time to tag along and bake up some goodies for your fun holiday parties and cozy Christmas movie nights. Are you ready? Let's begin!


This recipe is going to be a little more work, outside of buying your basic Pillsbury Dough Boy, pre-made packet of dough at the local grocery store. That's actually the reason why it's one of my favorites. When grandma said her meals were made with lots of love, she met to pass that one on. Now we'll get to say the same thing about this baked good. Did I mention that you'll probably be feeling lots of love after everyones gotten a taste too!


All of the ingredients your going to need, might likely already be in your kitchen right now. I was able to make 24 perfectly scoop- able sized cookies with this recipe. 

Side note: If you make the entire batch of dough and decide you only want to make half the recipe, store the rest of the dough in plastic wrap and toss it into the fridge or freezer for future use. I will admit this is great for those last minute holiday desserts and even late night snack cravings...because who doesn't love a little cookie dough?

7-10 minutes

The only reason it may take any more than 20 minutes, is if you're snapping pictures of your tasty looking desserts! Try taking one in front of the Christmas tree to add even more of a fun festivity look! 

Ingredients:
  • 2 cups of all purpose flour
  • 3/4 cup of coconut sugar
  • 1 cup of vegan butter
  • 1/4 cup of dairy free milk
  • 1 tsp of baking soda
  • 1 tsp of vanilla extract 
  • & as many dairy free chocolate chips as your heart desires!
Directions:
 1. Pre-heat your oven to 350 degrees and lightly grease a cookie
    sheet to prepare and set aside.
 2. In a mixing bowl, combine the vegan butter and coconut sugar.
    With an electric mixer, mix until combines to a look nice and 
    fluffy.
 3. Add in the vanilla extract and dairy free milk (almond, soy, 
    coconut). Mix until combined.
 4. In a separate bowl, add in flour and baking soda together.
 5. Add your dry ingredients to the wet ingredients and mix well 
    with a spoon until dough has formed
 6. Add in your dairy free chocolate chips. (AKA: best part so far!)
 7. Using a cookie scooper, scoop dough into balls and flatten on 
    the cookie sheet. 
 8. Plane in the oven and bake for 7-10 minutes, periodically 
    checking to see when the cookies begin to golden.
 9. Remove cookies from the oven and place to cool. 
 10. Serve and enjoy!
